Slimming World Spicy Beef Stir Fry
I have been trying out a couple of recipes from my Slimming World Magazine
Firstly, I made Spicy Beef Stir Fry
it was lovely and I will definitely make it again. So easy to make and on a Slimming World Orginial day (red) it is free!
Heat a wok and spray with fry light. Brown 1 lb (454g) of extra lean minced beef. Add 3 tbsp of mild curry powder and cook for 10 - 12 minutes. Add 11oz (312g) stir fry veggies and 3 - 4 tomatoes, chopped. Season and cook for another 10 - 12 minutes. Sprinkle with freshly chopped coriander and serve.
The next day I made Slimming World Stuffed Courgettes by simply halving 3 courgettes and scooping out the seeds with a teaspoon. Fill generously with the leftover Spicy Beef Stir fry and cook in the oven for 30 minutes. I was surprised at how tasty this was. The courgettes were perfect.
