My banana cake recipe is shaping up nicely. I made another today and the whole family ouuud and ahhhhd when it was in the oven. Upon eating it they all decided it is their favourite cake which is a miracle! WHAT the whole family actually ALL like something? Well there is a first time for everything.
Banana Cake certainly gets the thumbs up from me! AND it is super easy to make. It is good on its own or as a pudding with custard. I make it in a large round tin or sometimes a square one and cut it into small squares. I am experimenting with topping and adding things into the recipe. Chopped nuts or choc chips are a nice add in and chocolate or icing on the top. Decorate with grated chocolate or walnuts.
Banana Cake
6oz Butter
6oz Caster Sugar
5oz SR Flour
3 large Eggs
2 over ripe, mashed bananas
To decorate - icing sugar and walnuts or grated choc
Put butter in a large bowl and microwave for 1 minute. Mix in sugar. Add beaten egg and fold in flour. Fold in mashed banana. Pour into a greased tin and smooth out. Cook on 180 for 30 minutes (approx) When cool decorate with icing and grated choc or walnuts.

I love the old 1947 version and the more recent one. I just love Christmas feel good movies!
